It's Super Bowl Sunday!
I woke up this morning with game snacks on my mind. It's pretty "on brand" for me to wait until the last possible minute to start recipe planning, luckily this came together super quick!
Ever since I came up with protein pizza dough I've been keeping a batch in my fridge for pizza, flat bread, sandwich rolls, and bread sticks. It's that good and versatile.
The ingredients for the pizza are simple and easily modified to suit your preferences. The only things you really need are pizza dough, buffalo sauce, and a vegan protein. Everything else is just a bonus,
0.8 servings of my protein pizza dough (You can use 1! I separated my last batch into 5 servings instead of 4 so that's what I had on hand)
1 tablespoon+ extra for garnish of Frank's Red Hot buffalo sauce. Other brands are fine just check the labels, many contain dairy!
Approximately 20 grams shredded vegan cheese (I used Follow Your Heart Pizzeria Blend)
Approximately 20 grams vegan ricotta cheese broken into pieces (I used Kite Hill)
1/2 serving vegan chicken (I used Deliciou, pictures below)
Ranch for garnish: 1 tablespoon reduced dat veganaise combined with water to make runny, a pinch of salt, garlic powder, dried dill, and Italian seasoning
Optional: cilantro, scallions
Prepare Delicious meat. I like to follow the package instructions but omit the oil, then set aside to hydrate for 20 minutes
Preheat oven to 375
Roll out dough to desired thickness. It puffs up in the oven so roll a little thinner than you want it!
Cover dough with buffalo sauce
Place vegan chicken
Bake 10-15 minutes until crust is golden brown
Garnish with ranch, additional buffalo sauce, chopped scallions, and fresh cilantro
The macros will vary based on your exact ingredients/ product brands and amounts. This recipe would still taste great without any vegan cheese if you're looking to save a few additional calories and fat grams. It's the buffalo sauce and ranch that really make it pop!
