
Protein Breakfast Sandwich

I hate breakfast. I always have. Most mornings I am either not hungry, or eating something typically considered lunch or dinner food instead. But today I woke up seriously in the mood for "real" breakfast. Is it because it's a Sunday? Football play offs? Because I took a 3.5 mile walk with a friend yesterday? Who knows. Whatever the cause, this baby was born and it was SO GOOD.

INGREDIENTS
1/2 serving of my protein pizza dough
1 piece Just Egg folded egg
1 piece vegan bacon (I used Be Leaf)
2 pieces Yves vegan Canadian bacon
1/2 ounce Violife Colby Jack cheese
Sliced tomato
1 tablespoon vegan butter
Optional: Vegan cream cheese, mayo, etc., hot sauce, mustard
INSTRUCTIONS
Form the dough into the shape of a roll. Bake at 400 degrees Fahrenheit for 8-12 minutes or until golden brown
Cook Just Egg according to package instructions
Cook vegan bacon until crispy. I cook the Yves slices too
Butter both sides of the bread
Sprinkle cheese on one half, Microwave or place in oven to melt
Assemble the rest of the ingredients
The macros will vary based on your exact ingredients/ product brands and amounts. I added vegan cream cheese to one half of the roll because I felt like it, but it was totally not necessary. Sliced onions and pickles would have been nice additions too! Macros for the version pictured here:
