Protein Breakfast Sandwich


I hate breakfast. I always have. Most mornings I am either not hungry, or eating something typically considered lunch or dinner food instead. But today I woke up seriously in the mood for "real" breakfast. Is it because it's a Sunday? Football play offs? Because I took a 3.5 mile walk with a friend yesterday? Who knows. Whatever the cause, this baby was born and it was SO GOOD.



INGREDIENTS

  • 1/2 serving of my protein pizza dough

  • 1 piece Just Egg folded egg

  • 1 piece vegan bacon (I used Be Leaf)

  • 2 pieces Yves vegan Canadian bacon

  • 1/2 ounce Violife Colby Jack cheese

  • Sliced tomato

  • 1 tablespoon vegan butter

  • Optional: Vegan cream cheese, mayo, etc., hot sauce, mustard

INSTRUCTIONS

  • Form the dough into the shape of a roll. Bake at 400 degrees Fahrenheit for 8-12 minutes or until golden brown

  • Cook Just Egg according to package instructions

  • Cook vegan bacon until crispy. I cook the Yves slices too

  • Butter both sides of the bread

  • Sprinkle cheese on one half, Microwave or place in oven to melt

  • Assemble the rest of the ingredients

The macros will vary based on your exact ingredients/ product brands and amounts. I added vegan cream cheese to one half of the roll because I felt like it, but it was totally not necessary. Sliced onions and pickles would have been nice additions too! Macros for the version pictured here:
