Pumpkin Protein Bites
I resent protein powder.
Controversial I know.
I'm not against it on its own, and I generally use a scoop for quick protein after a workout, but I resent the idea that vegans must use a lot of it in order to meet very modest protein goals.
You can get plenty of protein as a vegan, even without it!
I've been on a vital wheat gluten kick. It's cheap, it's super high in protein, and crazy versatile! Vegan meat by day, dessert by night.
These little bites take about 3 minutes to mix together and cook quickly in the oven or air fryer. Plus they look a little fancy with the syrup or powdered sugar. You can also play around with the quantities of VWG to flour and swap out powdered PB for regular depending on the macros you are trying to hit. The best part? the entire recipe is a single serving.

Ingredients
10 grams Lupin flour (can sub any flour)
30 grams Vital Wheat Gluten
10 grams FDL Pumpkin Pie protein cookie butter (can sub powdered peanut butter)
1/2 teaspoon baking powder
1.4 teaspoon vanilla extract
1/2 teaspoon pumpkin pie spice
dash of cinnamon
pinch of salt
1.5 Tablespoons Pumpkin Skinny Syrup or other sugar free liquid flavor
1/8 cup unsweetened apple sauce / canned pumpkin
1/5 cup of water
Optional: Swerve sugar free powdered sugar, sugar free pancake syrup
Instructions
Combine all the dry ingredients into a bowl
Add apple sauce/ pumpkin, sweetener, vanilla, and water
Mix together until mixture forms a thick sticky batter (add more water if necessary) Careful not to overmix or else the dough will get stringy like seitan.
Use a spoon or your hands to portion gold ball sized balls onto a lightly greased baking sheet
Bake at 350 for 10-12 minutes in the oven or 325 in the air fryer
Optional: top with sugar free syrup and powdered sugar!
